Speedy No Bake Granola BarsWe all have those mornings. The alarm didn’t go off. You spill coffee all over your clothes. Your dog decides to roll himself in the mud minutes before you have to leave. All of these morning mishaps of course keep you from preparing a healthy breakfast. Luckily, I’ve got you covered.

These lovely granola bars are bound by honey and dates—you know, those sticky, sweet, slightly freakish-looking things—while also chock-full of oats and nuts to keep you at bay until lunch. Make these beauties on the weekend, and you’re one step ahead of your work-week worries.

Speedy No-Bake Granola Bars

Yield: about 12 bars

Total Time: 1 hour, 10 minutes

Active Time: 10 minutes


1 cup of packed medjool dates, pitted

1 ½ cups rolled oats

½ cup sliced almonds

¼ cup chia seeds

¼ cup pepitas

¼ cup honey

¼ cup almond butter (or any nut butter)

Soak dates for 5 minutes. Process dates in a food processor until a paste forms; it will form a ball. Add in half the amount of oats. Process until evenly mixed. Set aside.

In a large bowl, add remainder of oats, almonds, chia seeds and pepitas. Add processed date and oat mixture to the bowl. With your hands, combine all ingredients until moistened by the date mixture.

In a small saucepan, warm honey and almond butter over low heat until melted. Pour over oat mixture, and mix thoroughly.

In a parchment-lined 8 x 8 dish, transfer mixture to dish and press into all of the corners. Flatten the top with a spatula. Cover dish, and freeze for 1 hour. Cut into bars, and store in the refrigerator in an airtight container for up to a week.
