What to do with Those Thanksgiving Leftovers: Give Thanks Griddle Cakes
This is a clever—and delicious—take on a traditional day-after turkey sandwich from Taste corporate chef Thomas Yager. Here stuffing is griddled, much like a pancake, to act as the bread before piling high with turkey and more.
The Leftovers: Turkey, stuffing, cranberry sauce
The Encore Eat: Give Thanks Griddle Cake Sandwiches
1/2 cup leftover stuffing
3–4 slices leftover turkey
1 tablespoon mayonnaise
2–3 tablespoons leftover cranberry sauce
Press equal parts leftover stuffing into a 1/4-cup measuring cup and drop them onto a hot skillet. Using a spatula, press each about quarter-inch flat, and into a rough rectangle shape to form cakes. Brown cakes on both sides and remove from heat.
Heat turkey in the same pan. Add mayonnaise on one griddle cake, top with turkey and cranberry sauce, and add other griddle cake.
Yields 1 serving
