What To Do With Those Thanksgiving Leftovers: Hot Turkey Sandwich
Sometimes the best part of the meal isn’t the meal itself, but rather the leftovers.
Keeping that in mind, we’ve enlisted the assistance of Harper Bradshaw from Harper’s Table, Suffolk, to tell us just what he likes to do with his leftovers.

The Encore Eat: Hot Turkey Sandwich
“I’ve spent many years in the kitchen preparing a big Thanksgiving celebration for friends and family to enjoy together at the holiday table. It’s one of my favorite holidays because it’s all about family, food and appreciation of the many ways I’ve been blessed over the years. I fix this at least every single year after the big feast. I know this is incredibly simple, but it’s been a ritual of turkey day leftovers for as long as I can remember.” —Harper Bradshaw
2 slices white bread, or leftover homemade rolls
1 large spoonful leftover stuffing
3–4 pieces leftover sliced turkey
1–2 pieces country ham
2–3 tablespoons leftover gravy
Toast bread or rolls. Heat the stuffing, turkey, ham and gravy on their own.
Place one slice of the toast on a plate and add the stuffing, turkey, ham and gravy. Top with the other slice of toast and serve with heated leftover side dishes like green beans or twice-baked potatoes.
Yields: 1 sandwich
