What To Do With All That Basil

basil plantAlright I'll admit it here—just this once. My husband was right.

Instead of purchasing a couple basil plants, I made the single purchase, as he suggested. From dainty vine to bountiful bush, our basil has taken off this summer!

In my planter, I expected a controlled growth spurt, but now it’s overtaking the garden bed. No matter how much I cook with basil or give it to friends, the thing keeps growing at lightning speed (just imagine the growth of Audrey II from Little Shop of Horrors, except not as terrifying).

Now I'm faced with a dilemma (and maybe you are, too): what on earth will I do with all this basil?

There are always good intentions behind planting basil each year. “Oh, all the awesome things I will make!” I exclaim. The truth is, most of it ends up withering away because I just can’t find the time or occasion for endless pesto and caprese salads. Thus, I’ll be toiling away in the kitchen for the next few weeks as basil takes me from lunch to dessert. Here are 6 nifty recipes:

Deviled Eggs.

Basil in your deviled eggs? Oh, yes. Perk up your momma’s recipe with some basil, Greek yogurt and lemon zest in these Lemon Pesto Deviled Eggs.

Flatbread.

In this grilled Lemon Basil Ricotta and Veggie flatbread, basil gets sliced into dangly ribbons. I foresee this becoming a summer staple at your get-togethers.

Crostini.

When in doubt, toss the basil ribbons on slices of crispy bread. Now, that’s a crostini, my friends. Try this Grilled Asparagus and Mushroom Crostini, and I promise you will be mighty pleased.

Aioli.

What’s for dinner? How about Pan-Seared Scallop Prosciutto Pods and Arugula Salad. Basil gets blended with mayo, walnuts and serrano peppers for a spicy accompaniment to this fancy feast.

Pesto. How could pesto not be included? Sure, you can toss it with pasta or across the bread of your turkey sandwiches, but how about atop Pineapple Shrimp Skewers and a rainbow slaw? Now, that's how pesto should be used.

Ice cream.

But of course! Well, maybe it’s not the first thing that comes to mind when dreaming up basil recipes, but this Blackberry Basil Honey Ice Cream is a winner. Seedy blackberry bits and a hint of basil make this an undeniably sweet combination.

And when you still have more basil, just start gifting it to your friends.
