What To Do With All That Basil
Alright I'll admit it here—just this once. My husband was right.
Instead of purchasing a couple basil plants, I made the single purchase, as he suggested. From dainty vine to bountiful bush, our basil has taken off this summer!
In my planter, I expected a controlled growth spurt, but now it’s overtaking the garden bed. No matter how much I cook with basil or give it to friends, the thing keeps growing at lightning speed (just imagine the growth of Audrey II from Little Shop of Horrors, except not as terrifying).
Now I'm faced with a dilemma (and maybe you are, too): what on earth will I do with all this basil?
There are always good intentions behind planting basil each year. “Oh, all the awesome things I will make!” I exclaim. The truth is, most of it ends up withering away because I just can’t find the time or occasion for endless pesto and caprese salads. Thus, I’ll be toiling away in the kitchen for the next few weeks as basil takes me from lunch to dessert. Here are 6 nifty recipes:
Basil in your deviled eggs? Oh, yes. Perk up your momma’s recipe with some basil, Greek yogurt and lemon zest in these Lemon Pesto Deviled Eggs.
