Baked Camembert and Caramelized Pears

Cheese simply gets me. But when baked in a buttery puff pastry with smoky caramelized pears on top, it’s a quintessential situation for me. My favorite recipes are those that are snappy, yet snazzy enough to tote to your holiday parties—and this is just that.

If you haven’t yet crossed paths with camembert, it is essentially quite similar to brie in that it is a soft, white French cheese with a white rind, though it yields more nutty flavors than creamy brie. Its nuttiness seemed like the perfect pairing with one of winter’s beloved fruits, the pear. While I love cheese with charcuterie or on its own, there's something to be said about melted cheese topped with glistening caramelized pears amid the lustrous flaky layers of golden puff pastry. Since camembert is fairly mild, the fruit topping will truly set it apart from any of your pal’s cheese plates. Spread this gold goodness on crusty baguette slices, crackers or slice some gobs off the wheel and grab a spoon. However you feel so inclined to enjoy this gem, just make sure you get it while it’s hot!

Baked camembert and caramelized pears recipe

Ingredients

 

Caramelized Pears

1/4 cup brown sugar

1 Bartlett pear, cored and sliced thin

1 tbsp butter

 

Baked Camembert

1 egg

1 tbsp water

1 sheet of puff pastry

1 8.8-oz. camembert wheel (I used Le Rustique from Trader Joe’s)

Directions

Preheat oven to 375.

For pears: Place brown sugar on a plate, and press each side of the pear slices to coat. In a skillet, melt butter on medium heat. Add sugared pear slices to skillet. Flip pears to other side after about 3 minutes. Continue cooking and flipping until fruit is tender and golden for a couple minutes more. Set aside.

For baked camembert: Whisk egg and water together to make an egg wash. Roll out puff pastry sheet on a floured surface. Place camembert wheel in the middle. Top cheese with caramelized pears.

Bring all corners of the puff pastry to the center, lightly tugging to hug the cheese, and twist the corners at the top to seal.

Baked Camembert in Puff Pastry

Brush pastry with egg wash. Place wheel on a baking sheet, and bake for 15–20 minutes or until pastry is golden brown. Let stand for 5–10 minutes before serving on baguette slices, crackers or by the spoonful!
