The Best Thing I Ate This Week: BBQ Waffle Cone
Yes, you read that correctly: this BBQ is served in a waffle cone. If warmer weather could be summed up in one food item it would be this handheld dinner I had last Friday at the season’s initial First Fridays event held at The Plot, a vibrant outdoor gathering area for the public and for special events, in the heart of the Norfolk Arts District.
“What is this First Fridays?” you may ask. It’s essentially a block party that goes down once a month corralling local vendors, food trucks and the locals in a designated area in Downtown Norfolk. This meetup was held at The Plot located at the corner of Olney Road and Granby Street, but the locations will change throughout the summer. The Brandon Bower Band entertained the crowd while locals perused the booths and played life-sized rounds of Jenga. Local beer and wine was also available for purchase.
Among the handful of tasty food trucks including Sofrito (Read more about them here.) and Just Cupcakes, the blissful weather called for The Flying Pig’s barbecue. All in the convenience of a waffle cone, of course. Imagine a sort of deconstructed version of your beloved barbecue sandwich, but with bacon. I delved into this layered cone with a fork. Through the glossy honey was a nice helping of candied bacon—crispy, salty and sweet little nibs of perfection. Beneath the bacon was a bed of crunchy traditional slaw guarding the gold of the cone—succulent pork. Eventually I was able to break some of the cone off doing a sort of scooping tactic to finish off the rest. When I thought I reached the end of the treasure, more slaw was to be had with the last bite of waffle cone.
The husband and I also ordered a huge helping of their signature ribbon fries with all the fixings—cheese, jalapenos, you name it. Mm, mm it was one Good Friday.
Malbon’s BBQ was first a catering company since 1983, but their food truck has operated as ‘The Flying Pig’ since 2012 delivering the same delicious BBQ that the locals love. The Flying Pig’s menu isn’t just about the barbecue; they also whip up lettuce wraps, nachos and brisket sandwiches. Visit their Facebook page or website to find where the Pig will be next!
